The limitation of this sizing agent is that it does not work under alkaline conditions and sponges releasing free acids. Due to this, its durability lessens, and it becomes more brittle. This is a good option when the customers need a moderate level of water resistance and lower rates. 

Alkyl Ketene Dimer (AKD)

Alkyl ketene dimer is a synthetic molecule that has a waxy consistency. This molecule covalently bonds with cellulose fibers. This material works excellently under neutral or alkaline pH. This sizing agent gives durable and long-term water repellence. AKD gives remarkable water-resistance to paper without changing pH. It also prevents brittleness and yellowing of the paper. Alkenyl Succinic Anhydride (ASA)

Heat Tolerance

Regular paper starts breaking down or burning at a temperature of 148 degrees Celsius because β‑1,4‑glycosidic C–O bonds in cellulose start breaking down at this temperature. However, our parchment and butcher paper can withstand significantly high temperatures for a certain reason, as mentioned below: 

Parchment Paper 

Parchment paper can survive up to a temperature of 218 °C because it has a silicone coating that remains intact even at higher temperatures. In silicone coating Si–O–Si-O-Si bonds are present that do not break easily. Even the oxidative scission (also known as molecule cleavage) of Si–O–Si-O-Si-O-Si bond starts yielding cyclic oligomers around 300–350 °C and accelerates at a temperature of 400°C. So up to the temperature of 218 °C, the silicone layer blocks oxygen and insulates the paper from heat. That is why we usually consider the use of paper safe at around 220 degrees. 

Butcher Paper 

Butcher paper is mot os the time used uncoated, but due to the presence of residual lignin and high thickness, this paper can withstand heat during the whole smoking BBQs. The lignin molecular structure starts breaking at 200–500 °C, which forms 5 to 20 percent of the butcher paper sheets. The feature of lignin creates a carbonaceous layer that slows down the breaking process and makes the paper safe for high temperature applications.
